Brewing Art - Step by Step!

Naturally, the rules of the German Purity Law of 1516 apply.

Mild, pure water, high-quality aroma hops, and well-dissolved summer brewing barley are the key ingredients for our Eisgrub-Bräu. Brewed using traditional methods, right before your eyes, this beer is crafted with care. Experience the smooth, fresh taste, for which our master brewer personally oversees the process.

It all starts with barley malt.

The malt is ground into grist in a mill and poured by hand into the brewing kettle. Using the finest water, the mash is created, in which malt enzymes break down the starch into sugar at temperatures of 60 to 80°C. The solid malt components (the so-called "spent grain," which we also use in our bread) remain on the sieve of the lauter tun. The resulting wort is boiled for 90 minutes with premium aroma hops. The hot wort is then transferred from the brewhouse to the wort chiller.

Yeast turns maltose into alcohol.

The wort is then transferred to the fermentation tanks, where yeast is added and fermentation begins. The sugar in the wort is converted into alcohol and carbon dioxide. This process takes place at a temperature of 6 to 10°C within approximately one week.

Always fresh!

Once fermentation is largely complete, the young beer is transferred to lagering tanks, where it undergoes a secondary fermentation for approximately four weeks at a temperature of 0 to 3°C. In this closed system, carbon dioxide develops through this secondary fermentation, which is then bound within the beer by the resulting pressure. The finished Eisgrub-Bräu is then poured into your glass at an average temperature of 8°C and served fresh, naturally cloudy!
